2017 Reserve Cabernet Sauvignon
The cooler 2017 vintage really shook things up in the cellar and we saw the Cabernet picked ahead of the Durif. Cab Sav lends itself to the cooler April weather and was given the royal treatment to our very best new French oak. I’m super proud of this wine and despite not being of the Parola’s ilk, it has an incredible presence and length on the palate.
Opaque dark red/black colour with a dark red hue. This wine is the epitome of a (happy) marriage between oak and fruit. The impact of new French oak in this wine is evident in the dried spice on the nose, and the dusty, fine grained
wood tannins on the palate. Iced Vovo, tobacco and cedar on the nose, blackcurrant cassis and textural tannins drive the length of the medium-weight palate.
